“你穷得连祁门红茶也拿不出来了”。小仲马名著《茶花女》中在描述一位贵族衰落时这样说。:饮用“祁门红茶”,代表着高贵与时尚的身份,因此英国上流社会无不以拥有祁门红茶为骄傲,作为午后茶的珍品。
土耳其诗人希克梅特赞美道:“我在中国的香茶里,发现了春天的芬芳”。

祁门红茶,Keemun Black Tea
祁门红茶,简称“祁红”,是我国传统工夫红茶的珍品,与印度大吉岭茶、斯里兰卡乌伐的季节茶,并列为世界公认的三大高香茶。在国际市场上,祁红被称为“高档红茶”,是欧洲下午茶中的极品,特别是在英国伦敦市场上,被列为茶中“英豪”,并且受到了皇家贵族的宠爱,赞美祁红是“群芳最”。也称为“祁门香”;“王子香”;祁门茶区的江西“浮梁工夫红茶”是“祁红”中的佼佼者,向以“香高、味醇、形美、色艳”四绝驰名于世。
红茶的消费市场,主要分布在欧美和中东,近来日本和韩国饮用红茶的消费者也日增;祁门红茶从1875年问世以来,为我国传统的出口珍品,久已享誉国际市场,已出口英、北欧、德、美、加拿大、东南亚等50多个国家和地区。
除了单一品种的红茶以外,还有混合茶(blended tea)和调味茶(flavoured tea)。混合茶是把不同品种红茶的搭配起来制成的。调味茶是在红茶中加入水果,花,香草的香味制成的,如加入了佛手柑香味的英国的伯爵茶,加入了荔枝香味的中国岭南的荔枝红茶等等。

祁门红茶,产于中国安徽省西南部黄山支脉区的祁门县一带。祁红的产地除祁门外,毗邻的石台、黟县,以及东至、贵池等地所产的工夫红茶统称“祁红”。
祁红产区,自然条件优越,山地林木多,茶园多分布于海拔100~350米的山坡与丘陵地带,温暖湿润,土层深厚,雨量充沛,云雾多,很适宜于茶树生长,加之当地茶树的主体品种——槠叶种内含物丰富,酶活性高,很适合于工夫红茶的制造。当地的茶树品种高产质优,植于肥沃的红黄土壤中,而且气候温和、雨水充足、日照适度,所以生叶柔嫩且内含水溶性物质丰富,又以8月份所采收的品质最佳。

祁门红茶采制工艺:
祁红采制工艺精细,于每年的清明前后至谷雨前开园采摘,现采现制,以保持鲜叶的有效成分。采摘一芽二、三叶的芽叶作原料,经过萎凋、揉捻、发酵,使芽叶由绿色变成紫铜红色,香气透发,然后进行文火烘焙至干。红毛茶制成后,还须进行精制,精制工序复杂花工夫,经毛筛、抖筛、分筛、紧门、撩筛、切断、风选、拣剔、补火、清风、拼和、装箱而制成。
祁红外形条索紧细匀整,锋苗秀丽,色泽乌润(俗称“宝光”);内质清芳并带有蜜糖香味,上品茶更蕴含着兰花香(号称“祁门香”),馥郁持久;汤色红艳明亮,滋味甘鲜醇厚,叶底(泡过的茶渣)红亮。清饮最能品味祁红的隽永香气,即使添加鲜奶亦不失其香醇。既可单独泡饮,也可加入牛奶调饮。冲泡后汤色红艳明亮,香气芬芳,馥郁持久,似苹果与兰花香味。如加入牛奶、食糖调饮,亦颇可口,茶汤呈粉红色,香味不减。

祁门红茶---饮用方法
清饮法:红茶可以用紫砂茶壶,白瓷瓷盖碗冲泡。也可以用咖啡杯冲泡。
混饮法:冲泡后可以按个人喜好,加牛奶和砂糖饮用。还可以加入,奶酪、肉桂等调味品。红茶还衍生出了其他饮品:柠檬红茶,泡沫红茶,珍珠奶茶, ** 红茶
祁门红茶冲泡方法
1.简单泡法:将水烧沸,茶具最宜景瓷,装上大约占壶容量十分之五的茶叶,冲入沸水,冲泡后香气高锐持久,隔45秒左右倒入小杯,先闻香,再品味,满口生香,回味甘美。
2,功夫泡法
祁门红茶采用清饮最能品味其隽永香气,冲泡工夫红茶时一般要选用紫砂茶具、白瓷茶具和白底红花瓷茶具。茶和水的比例在1:50左右,泡茶的水温在90—95℃。冲泡工夫红茶一般采用壶泡法,首先将茶叶按比例放入茶壶中,加水冲泡,冲泡时间在2—3分钟,然后按循环倒茶法将茶汤注入茶杯中并使茶汤浓度均匀一致。品饮时要细品慢饮,好的工夫红茶一般可以冲泡2—3次。

祁门红茶-温馨提示
1、新茶不宜多喝,存放不足半个月的新茶更不要喝。新茶并非越新越好,正确方法是放置半个月以后才可能使用。
2、不宜在睡前或空腹时饮用;新茶中还含有较多的咖啡因、活性生物碱以及多种芳香物质,这些物质还会使人的中枢神经系统兴奋,
3、有神经衰弱、心脑血管病的患者应适量饮用。
4、春天饮红茶以它最宜,下午茶很合适。

祁门红茶保健功效
1,西方有谚:“一天四杯红茶,常保心血管无忧”。喝红茶都有保护心血管的作用,因为两者都在发酵的过程中形成了特别的化合物质。对心脑血管疾病已成为城市居民致死的第一大病的时候,给自己泡杯好红茶也许是个不错的选择。

How to Brew Black Tea ?
1,Black tea requires high temperature for efficacious extraction. It is necessary to keep container warm in order to maintain adequate temperature in brewing water.
2,Warm up the pitcher
3,3g for 150ml of water. 2 Tea spoons = 3g
4,Pour the tea leaves into the warmed tea pot.
5,If you do not have tea pot and use any container for brewing tea, please make sure use a cap in order not to reduce the temperature.
6,It is not advisable to pour water from high position. It would damage the tea leaf and cause astringent taste.
7,Brew for 1-2 mins. 1 min for lighter taste and 2 mins for thicker taste.
8,If you prefer tea to be very hot, please warm up the tea cup in advane.
9,Move tea into pithcer in order to even out its concentration.
10,After 1st brewing, tea leaves must be filtered well and kept without water. This is to avoid the liquor becoming bitter and stewed, and also to avoid unpleasant feeling of bits of tea leaves on your palate when drinking. Besides, it prevents tea leaves from being over cooked.

英国17世纪著名诗人拜伦在他的著名《唐瑛》(长诗)里写道:“我觉得我的心儿变得那么富于同情,我一定要去求助于武夷的红茶;真可惜,酒却是那么的有害,因为茶和咖啡使我们更为严肃。” 他称正山小种红茶为武夷红茶,给予富有文学浪漫色彩的赞评。
正山小种红茶曾是英国女皇及皇室家族专用饮品。它诱发了盛行欧洲的“午后茶、下午茶”。 1662年葡萄牙公主凯瑟琳嫁给英皇查理二世时带去几箱中国“正山小种”红茶作为嫁妆,带入英国皇宫,据传英国皇后每天早晨起床后第一件事,就是要先泡一杯“正山小种”红茶,为此“正山小种”红茶成为贵重的珍品。随后,安妮女王提倡以茶代酒,将茶引入上流社会,为此正山小种红茶作为当时的奢侈品,后逐渐演化成“下午茶”。茶馆刚出现时竟成单身女子唯一能公开会晤朋友而不损及名誉的唯一场所

正山小种红茶,Lapsang Souchong (粤语)俄罗斯称武夷茶,后称熏茶,日本称拉普山小种(粤语)。“正山小种”红茶一词在欧洲最早称武夷BOHEA,就是现在所说的武夷地名的谐音,在欧洲(英国)它是中国茶的象征。红茶是近代世界各类茶中产、销量最大的一类茶,约占世界茶叶消费及贸易量的80%以上。中国是茶的故乡,也是世界红茶的发源地,世界各国的红茶都起源于中国。“正山小种”茶是世界红茶之祖。正山”既指正确正宗的意义,而“小种”是指其茶树品种为小叶种,且产地地域及产量受地域的小气候所限之意;正山小种之"正山",及表明是真正的"高山地区所产"之意,凡是武夷山中高海拔,桐木一带所产的茶,均称作正山,而武夷山附近所产的茶称外山。
属墙内开花墙外香的产品,由于它在欧洲国家拥有几百年的历史渊源及文化底韵,正山小种红茶繁荣于17世纪,武夷(BOHEA),中国福建省武夷(WU-1)山所产的茶,通常用于最好的中国红茶(CHENA BLACK TEA)。由于正山小种红茶茶味浓郁、独特,在国际市场上备受欢迎,远销英国、荷兰、法莫道不消魂国等地。

Lapsang souchong (拉普山小種/正山小种, lit. Small variety from mountain Lap) is a black tea originally from the Wuyi region of the Chinese province of Fujian. It is sometimes referred to as smoked tea (熏茶). Lapsang is distinctive from all other types of tea because lapsang leaves are traditionally smoke-dried over pinewood fires, taking on a distinctive smoky flavour.
The name in Fukienese means "smoky variety" or more correctly "smoky sub-variety." Lapsang souchong is a member of the Wuyi Bohea family of teas. The story goes that the tea was created during the Qing era when the passage of armies delayed the annual drying of the tea leaves in the Wuyi hills. Eager to satisfy demand, the tea producers sped up the drying process by having their workers dry the tea leaves over fires made from local pines.
Lapsang souchong from the original source is increasingly expensive, as Wuyi is a small area and there is increasing interest in this variety of tea.
正山小种产地在福建省武夷山市。茶叶是用松针或松柴熏製而成,有着非常浓烈的香味。因为熏製的原因,茶叶呈黑色,但茶汤为深红色。“正山”指的是桐木及与桐木周边相同海拔;相同地域;用相同一种传统工艺制作;品质相同,独具桂圆汤味的统称“正山小种”,“故“正山小种”又称桐木关小种,“正山小种”红茶也称“武夷云雾茶“。LAPSANG的由来是因此茶在福州出口,贸易商根据福州方言称烟正山小种为LA熏的茶,LA 指的是松明。

红茶则一般分三大类:小种(就是小叶种的茶树出产)、功夫(大叶种出产)、红碎茶(把大叶种剁碎了);红茶的茶树分两类:大叶种,小叶种。
正山小种,属红茶类,与人工小种合称为小种红茶。现人工小种布场已被淘汰,唯正山小种百年不衰。正山小种红茶分为两种口味:一,正山小种红茶东方口味--桂圆味(龙眼);二,正山小种红茶西方口味--LAPSANG小种。目前使用的”正山小种”行业标准依次分为:特等(仿传统制法),特级,一级,二级,三级。顶级正山小种红茶的根据茶叶的品质及采摘的标准不同,分为金骏眉、银骏眉。

小种红茶主我国福建省之特产,现在产地仍以武夷山市黄岗山桐木村为中心,另建阳、光泽交界处的高地茶园均有生产。产区四周群山环抱,山高谷深,气候寒冷,年降水量达2300毫米以上,相对湿度80~85%,雾日多达100天以上,日照较短,霜期较长,土壤水分充足,肥沃疏松,有机物质含量高。茶树生长茂盛,茶芽粗纤维少,持嫩性高。

正山小种红茶的制作工艺大体分为:初制技术分为:采摘茶箐—萎凋—揉捻—发酵—过红锅(炒)—复揉—熏焙—复火—毛茶等过程。 精制工艺分为:定级分堆——毛茶大堆——筛分——发酵——风选——拣制——烘焙——匀堆——装箱——成品
正山小种红茶保管简易,只要常规常温密封保存既可。因其是全发酵茶,一般存放一,两年后松烟味进一步转换为干果香,滋味变得更加醇厚而甘甜。茶叶越陈越好,陈年(三年)以上的正山小种味道特别的醇厚,回甘。

正山小种红茶外形条索肥实,色泽乌润,泡水后汤色红浓,香气高长带松烟香,滋味醇厚,带有桂圆汤味,加入桂圆汤味,加入牛奶茶香味不减,形成糖浆状奶茶,液色更为绚丽。其成品茶外形紧结匀整,色泽铁青带褐,较油润,有天然花香,香不强烈,细而含蓄,味醇厚甘爽,喉韵明显,汤色橙黄清明,叶底欠匀净,与其他茶拼配,能提高味感。成茶品质特别优异。
This unique black tea is smoke dried over pinewood, giving it a heavily smokey aroma and a deep, rich liquor. The tea leaves are first withered over pine root fires, then panfried, rolled and oxidized. The leaves are finally placed in bamboo baskets and hung on wooden racks over smoking pine fires to dry and absorb the smoke. This results in a powerfully smoky aroma coupled with a smooth taste.
但其总的品质特征,共分为四个花色。
叶茶:传统红碎茶的一种花色,条索紧结匀齐,色泽乌润,内质香气芬芳,汤色红亮,滋味醇厚,叶底红亮多嫩茎;碎茶:外形颗粒重实匀齐,色泽乌润或泛棕,内质香气馥郁,汤色红艳,滋味浓强鲜爽,叶底红匀;
片茶:外形全部为木耳形的屑片或皱折角片,色泽乌褐,内质香气尚纯,汤色尚红,滋味尚浓略涩,叶底红匀;
未茶:外形全部为砂粒状未,色泽乌黑或灰褐,内质汤色深暗,香低味粗涩,叶底暗红。采用的原料为保护区内的菜茶。
菜茶,是武夷山最早的品种之一。其树丛很矮小,枝干较细。是靠种子播种的有性繁育之品种。花盛籽多,可供播种。

红茶品饮
一般人放3—5克茶叶就可以,口味淡者可放得更少些,保证茶和水的比例为1∶50。也就是说如果放3克红茶,应当用150毫升水来冲泡。红茶与瓷杯搭配,视觉和味觉效果最佳,建议大家每杯茶冲泡3—5分钟。
红茶不适于放凉饮用,会影响暖胃效果,放置时间过长还能降低营养含量。泡红茶最好用敞口杯,不要等到杯中的水都喝尽才补充热水,最好等水剩下1/3左右时就蓄水,以便稀释茶叶,保持茶的温度和浓度适宜,每杯红茶蓄水3次口感最佳。

调饮法在红茶中加入辅料,以佐汤味的饮法称之为调饮法。调饮红茶可用的辅料极为丰富,如牛奶、糖、柠檬汁、蜂蜜甚至香槟酒进行调配。调出的饮品多姿多彩,风味各异,深受现代各层次消费者的青睐。
  将杯具洗净暖热之后,即将5~8克红茶放入白瓷杯中,然后冲入沸水,3~5分钟后出水,先闻其香,再观其色,然后品味。一杯茶叶通常可冲泡8~10次,与乌龙茶的功夫泡法基本相同。
  牛奶红茶:将茶叶放入壶中,用沸水冲泡,浸泡5分钟后,再把茶汤倾入茶杯中,加入适量的糖和牛奶或乳酪,就成为一杯芳香可口的牛奶红茶。
  冰红茶:将红茶泡制成浓度略高的茶汤,然后,将冰块加入杯中达八分满,徐徐加入红茶汤。再视各人爱好加糖搅拌均匀,即可调制出一杯色、香、味俱全的冰红茶。
  泡沫红茶:用红茶、冰块、果酱、糖水,先用开水冲泡红茶,过滤出茶汤备用;用调酒器放入冰块至八东篱把酒黄昏后九分满,加入糖水,再加红茶汤,拧紧瓶盖、上下用力摇晃,利用冷热冲击下急速冷却的原理产生泡沫,摇至冰块溶化即可倒出饮用。
皇家奶茶:红茶、清香型高品质高度数洋酒、方糖、牛奶,先用开水冲泡红茶,过滤出茶汤备用;用汤匙盛8分满加一块方糖,点燃方糖约一分钟倒入奶茶杯,加入已冲泡好的红茶汤,再加入大概4毫升的纯牛奶,搅拌均匀即可饮用

如何制作冰正山小种红茶  
a、取红茶3-5克放入盖杯中,开水冲泡放置一旁,等待3-5分钟。(茶水浓度顔色为暗红色为佳)。b、取200透明玻璃杯,把冰块装入杯子至五分满。c、倒入糖浆少许,(糖浆即砂糖与水7:10配比的溶液)。 d、将泡好的茶水倒入玻璃杯中,搅拌后即可饮用。 以上冲泡的方法可根据自己的口感添加。

喝红茶的好处:
红茶是经过发酵烘制而成,茶多酚在氧化酶的作用下发生酶促氧化反应,含量减少,对胃部的刺激性就随之减小。另外,这些茶多酚的氧化产物还能够促进人体消化,因此红茶不仅不会伤胃,反而能够养胃。经常饮用加糖的红茶、加牛奶的红茶,能消炎、保护胃黏膜,对治疗溃疡也有一定效果。

How to Make a Tomato Lapsang Souchong?
---A smoky, rich and savory tea mocktail
This savory tea drink (开胃口茶)makes a rich and flavorful alternative to a Bloody Mary(血玛莉酒). Pair with heavy weekend brunches or enjoy as a liquid afternoon snack.

Ingredients:1 Tbsp Lapsang Souchong tealeaves;1 cup boiling water;1 cup tomato juice or tomato-juice blend (such as V 8) ;1 celery stalk, or other Bloody Mary garnishes besides lemon or lime;
Hot sauce, salt or other seasonings (to taste)
Ice (as needed)
Preparation:
Brew the tealeaves in the boiling water for 5 minutes.
Strain the leaves. Blend the tea with the tomato juice.
Pour over ice.
Add desired seasonings and garnishes. Serve immediately.
Makes about 2.5 cups (20 oz.).

苦丁茶属被子植物门双子叶植物纲卫矛目冬青科,Broadleaf Holly Leaf,别名 菠萝树、大叶茶、苦灯茶。来源为冬青科植物大叶冬青的叶。生于山坡、竹林、灌木丛中。分布于长江下游各省及福建。对“苦丁茶”一词的来历,一般认为“苦”即其味苦甘,“丁”即“一小片”或“一丁点”的意思,即是有一点苦味的茶。
采制:全年可采收,除去杂质,干燥。
性状:叶呈卵状长圆形,革质,不皱缩,有的纵向微卷曲,上面黄绿色或灰绿色,有光泽,下面黄绿色。味微苦。
性味:性大寒,味苦、甘。
加工技术:采摘来的鲜茶叶,要及时进行加工处理,切勿层积堆沤,以免叶落腐烂。
萎凋---杀青---揉捻---干燥

其成品茶清香有味苦、而后甘凉,素有“保健茶”、“美容茶”、“减肥茶”、“降压茶”、“益寿茶”、 ‘绿色黄金等美称。近年来,对苦丁茶的研究多集中在加工成品茶和茶饮料等营养保健方面,现已成功研制出了袋泡苦丁茶、苦丁茶冲剂、苦丁茶含片、复合型苦丁茶等多种保健食品

苦丁茶富含VC、VD、VE、多种氨基酸、苦丁皂甙、苦丁皂元、β胡萝卜等营养物质,是天然养颜之食品。美丽容颜由内而外散发魅力。

中老年人的益寿茶
对于高血压、高血脂、高血糖等的疾病患者来说,通过饮用苦丁茶将血压、血脂、血糖降下来之后,可适当降低饮用浓度,但不要完全停止,以免病情反复。如果饮用苦丁茶的浓度适当,照样可以在二三十天内把血压、血脂降下来。这也正是苦丁茶的价值所在。
对心脑血管疾病患者的头晕、头痛、胸闷、乏力、失眠等症状均有较好的防治作用。除此以外,苦丁茶外形绿润均匀,汤色清绿明亮,口感微苦滑爽,回甘长久,饮后神清气爽,消乏解渴。因此备受人们,特别是中老年人的青睐。

苦丁茶饮用注意事项
1、风寒感冒者:冬季是感冒的高发季节,患了风寒感冒的人应该多吃些温热的食物,如生姜等,祛除体内的寒气,如果此时饮用苦丁茶,会有碍风寒的发散,不利于感冒的治愈。
2、虚寒体质者:虚寒体质者最突出的特点是冬季特别怕冷,常常感觉手脚冰凉。这种体质的人喜欢吃羊肉、狗肉等温性食物,而且不容易“上火”,但喝了寒性的苦丁茶后,手脚冰凉的症状会加重,不利于虚寒体质的改善,严重的甚至会出现腹痛、腹泻等症状。
3、慢性胃肠炎患者:慢性胃肠炎患者常常存在着不同程度的脾胃虚寒,腹部受凉或吃了凉性食物时,容易肚子疼或拉肚子,苦丁茶会加重这些症状。此外,老年人脾胃功能相对减弱,婴幼儿脾胃功能尚未健全,也不宜饮用苦丁茶,否则容易引起消化不良、厌食、腹泻等副作用。
4、经期女性:女性月经期处于失血状态,抵抗力降低,此时如果喝寒性的苦丁茶,极易导致气血受寒而凝滞、经血排出不畅,引发痛经,严重者可造成月经不调。经常痛经的女性,即使不是在经期,也最好少喝苦丁茶。
5、新产妇:刚生完宝宝的新产妇身体虚弱,应适当多吃一些温补性的食物。寒性的苦丁茶不仅不利于产后子宫的恢复,还会伤及脾胃,极易引发日后缠绵难愈的腹

苦丁茶的饮用方法
苦丁茶在冲饮时,有单独冲泡和与其他茶叶、药材混合冲泡两种泡法。
单纯以苦丁茶冲泡,原汁原味,清甜爽口,也不失为一种享受。
而当其与其他茶叶,如乌龙茶、绿茶、龙井、毛尖、花茶等混合冲泡时,则既有这些茶的香味,又有苦丁茶回甘和润喉的优点。苦丁茶在茶叶中素有“茶胆”的名声,即无论什么茶,苦丁茶在味道上都能与之相配,而且拼配苦丁茶后更是别有一番风味。
一般而言,苦丁茶与其他茶叶相配的比例为:1:9,最高最好不超过2:8,否则,苦丁茶就会把其茶叶的味道盖住。
对于有胃寒疾病的人而言,在冲泡时可以和红茶、乌龙茶等热性茶或与人参、桂元、红栆、枸杞、冰糖等热补药材一并冲泡,这种冲饮方法虽然对苦丁茶的药性有一定的中和作用,但也能具有其他茶、药的优点。夏天还可以与蜂蜜一起冲泡制成苦丁茶甘露,口感极佳,清凉解渴。
苦丁茶有利尿作用,但是太苦,多饮有伤脾胃之嫌。所以每次用一片(卷起来的一根)就可以,泡一整天,两根就很苦了,很难下咽。取苦丁茶1-2条,投入杯中,用沸水冲泡 三分钟即可饮用,可连续冲泡数次,浓淡由人。

苦丁有二种,一种为大叶苦丁茶,一种为小叶苦丁茶。大叶的一般产于海南,味特苦,越喝越苦,颗大,呈黑色。另一种小叶苦丁全名为“野生小叶苦丁”相传此茶原为野生种,后大多经人工培植而成。原产于四川宜宾,素有“青山绿水”之美誉。且有降血脂降血糖,清热等作用。
苦丁茶主要有四类,
一类是香兰苦丁,一般喜欢喝咖啡的消费者会喜欢这类苦丁茶;
一类是苦丁绿茶,就是用苦丁茶和绿茶按一定比例拼配而成,这是最大众化也是最为一般消费者接受的苦丁茶,与绿茶的拼配使其既有绿茶的香味,又有苦丁茶的回甘;一类是茉人比黄花瘦莉花苦丁,是用茉人比黄花瘦莉花与苦丁茶拼配而成的,口味较淡,北方消费者更喜欢这类苦丁茶;

Tea Rites:From 1392-1910, tea ceremonies were performed regularly at palaces in Korea. The "Day Tea Rite" was a common daytime ceremony, but the "Special Tea Rite" was reserved for specific occasions, including royal weddings and visits from leaders of other countries.There was one tea ceremony, however, that the king was not invited to. This was the Queen Tea Ceremony. The only male guest was the crown prince, the eldest son of the Queen. The other guests were female friends, family and servants of the Queen.

在韩国「茶」细数超过百种以上,范围非常广,大致可分为六大类,传统茶树的茶叶类,果酱茶类、五谷茶类、加味花茶类、养生类、和当甜品的茶,都被称为「茶」,共同特点是都具有「饮疗」的效果。
茶叶类韩国当地的代表就是绿茶(녹차) (发音念作:Nok Cha ㄋㄡˋK蹅),有着独到的风味。香片、乌龙则被划为中国茶。

五味子是常用的药膳食疗保健佳品
五味子 :木兰科植物北五味子的成熟果实。 酸,温。入肺、肾经。功效:敛肺滋肾,生津敛汗,涩精止泻。
应用:1.用于久嗽虚喘。五味子能上敛肺气,下滋肾阴,对肺肾两亏所致的久咳虚喘,可收止咳平喘的效果,常配党参、麦冬、熟地、山萸肉等同用。
2.用于津少口渴、体虚多汗等症。本品能生津止渴、固涩敛汗。常可配麦冬、生地、天花粉等用治津少口渴;可配党参、麦冬、浮小麦、牡蛎等治体虚多汗,无论阳虚自汗,阴虚盗汗,均能应用。

In Korea, the tea is known as boricha, and it is drunk hot in winter and cool in summer. The Chinese sometimes pair barley tea with heavy meals to aid digestion, and use it to treat nausea.
Traditionally, barley tea is made by tossing a handful of barley grains into a kettle of water, bringing the kettle to a boil, and then allowing the tea to steep briefly before pouring. In some households, the kettle may simply be left out on the stove, with members of the household serving themselves as desired. Over the course of a day, the flavor of the tea will deepen, becoming increasingly nutty and intense. Some Korean cooks like their barley tea so intense that it tastes almost like coffee,. How to Brew Japanese Green Tea
Green tea has the highest presence of antioxidant properties among all teas and Japanese green tea offers abundance of benefits for your health. Japan has been leading the world in average life expectancy for many years and it is believed that one factor that helps contributing to high life expectancy among Japanese people is their regular consumption of Japanese green tea.
Step 1:Boil fresh, clean water in a kettle and remove from heat.
Step 2:Pour hot water from the kettle into empty teapot. Remember not to put any tea leaves, just yet. The secret to tasty Japanese green tea is to brew it using lower water temperature. Avoid brewing Japanese green tea in boiling water or water that it is too hot, otherwise your tea will turn out to be too bitter.
Step 3:Pour hot water from teapot into teacups. This process of pouring water twice (once from kettle to teapot and then from teapot to teacups) ensures that the water is cooled down to ideal temperature before tea leaves are added.
Step 4:Now, add recommended amount of loose tea leaves to the teapot and pour hot water from teacups back into the teapot. Do not stir, shake or swirl the tea inside the teapot as it might adversely effect the taste of your tea.
Step 5:Allow tea to brew for about 45 seconds to 1 minute (infusion time might be slightly longer depending on your Japanese green tea variety) and pour flavorful tea into teacups. Remember not to leave tea leaves in the water for a long time because leaves will get cooked and the tea will turn out to be too bitter.

In Tang Dynasty China (618-907), tea leaves were steamed and formed into tea bricks for storage and trade. Powdered tea was slowly forgotten in China, but in Japan it continued to be an important item at Zen monasteries, and became highly appreciated by others in the upper echelons of society during the 14th through 16th centuries. Along with this development, tea plantation owners in Uji perfected techniques for producing excellent tea for matcha.

Things You'll Need:
• Very fine wire mesh sieve
• Temporary storage container
• Special wooden spatula (used to force tea through sieve to keep fine powery consistency)
• Tea bowl
Step 1:Place sieve over a temporary container. Add the powdered Matcha into the sieve.
Step 2:With the special wooden spatula, force the Matcha through the sieve and into the temporary container.
Step 3:Place 1/2 teaspoon of the Matcha into the tea bowl, and add hot water (not boiling water).
Step 4:With the bamboo whisk, whisk the Matcha in back and forth motions, quickly then slowly a few times, then wisk in figure 8 styles back and forth in the bowl. 珠茶选以平炒青为原料,精制加工采取单级付制,成品多级收回的方式,其加工工艺是:原料拼和、定级,分原身、轧货、雨茶三路取料。加工作业分为生取、炒车、净取等工序制成各级筛孔茶,然后对样拼配,匀难装箱而成为出口珠茶产品。其产品规格依据质量和形状分为珠茶、雨茶、碎茶、秀眉等。加工珠茶的企业主要有绍兴、嵊州三界、新昌、上虞、余姚、奉化、东阳、磐安等精制茶厂。
珠茶为我国最早出口的茶品之一,17世纪即有少量输出海外。18世纪初期,珠茶以“熙春”、“贡熙”的茶名曾风靡欧陆茶坛,被美誉为“绿色的珍珠”。平水珠茶是浙江独有的传统名茶,素以形似珍珠、色泽绿润、香高味醇的特有风韵而著称于世。珠茶是浙江绿茶出口的大宗茶类之一,也是浙江特有的茶叶品类。几百年来,外销不衰,成为我国主要出口绿茶产品,珠茶输出初期以销欧、美为主,20世纪20年代起,以销西、北非为主。如今珠茶已行销40多个国家和地区。

下午茶是指享负盛名的英国维多利亚时代的英式下午茶(afternoon tea)。 下午茶是英国17世纪时期的产物,绵延至今,逐渐变成现代人休闲的一种习惯。
下午茶起源于17世纪。当时,英国上流社会的早餐都很丰盛,午餐较为简便,而社交晚餐则一直到晚上八时左右才开始,人们便习惯在下午四时左右吃些点心、喝杯茶。下午茶在英国上流社会流行。 红茶传进欧洲时,由于是遥远东方来的珍品,“喝茶”还只是上流社会的专属享受。后来红茶在伦敦的咖啡屋、红茶庭园开始流行。18世纪中期以后,茶才真正进入一般平民的生活。英国贵妇人之间风行的时尚便逐渐平民化,下午茶风俗开始盛行于饭店和百货公司之间。 英国人最喜爱的下午茶时间,多集中在下午3时到5时半之间,喝下午茶的最正统时间是下午四点钟(就是一般俗称的Low Tea) 在优雅的氛围里往往可以让人们感受到心灵的祥和与家庭式的温暖,从而舒解一天的疲劳。

Afternoon tea is a light meal typically eaten between 3 pm and 5 pm. The custom of drinking tea originated in England when Catherine of Braganza married Charles II in 1661 and brought the practice of drinking tea in the afternoon with her from Portugal. Various places that belonged to the former British Empire also have such a meal. However, changes in social customs and working hours mean that most Britons only take afternoon tea on special or formal occasions.
Traditionally, loose tea is brewed in a teapot and served in teacups with milk and sugar. This is accompanied by various sandwiches (customarily cucumber, egg and cress, fish paste, ham, and smoked salmon), scones (with butter, clotted cream and jam — see cream tea) and usually cakes and pastries (such as Battenberg, fruit cake or Victoria sponge). How to Make a Perfect Cup of Earl Grey Tea
Things You'll Need:Earl Grey loose Tea ;Fresh Water ;Re-Usable Tea bag or Strainer ;Large pot;Teapot ;Cup and Saucer
Step 1:Brewing Earl Grey tea properly:Start with cold water. If the water contains a lot of iron or chlorine, you may want to use bottled or filtered water.
Step 2:Preheat your teapot: Simply boil enough water to fill the teapot one and one half times. Pour the hot water into the teapot, swish it about. This will heat the teapot. Then pour the used water out. (If you omit this step, your tea will become lukewarm quickly, preventing the full aroma and benefit of the tea).
Step 3:Measure 1 tsp. of loose tea for every cup you plan to pour, plus “one for the pot” into the teapot. Place the tea into a reusable tea bag for easy straining.
Step 4:For black teas, bring the water to a full boil. Remove the teakettle from the heat as soon as the water begins to boil. Boiling all of the oxygen out of the water will flatten the tea' s flavor.;For delicate green teas, remove the teakettle from the heat before the water begins boiling, at 165-170 degrees F.
Step 5:Before steeping, pour a small amount of the hot water over the tea leaves to allow them to bloom, or open up, and release some of their bitter tannins. Drain immediately.
Step 6:Fill the pot with the boiling water. Keep the spout of the kettle close to the teapot, so the water does not cool as you pour it in. Cover the teapot with a tea cozy if you have one. Leave the tea to brew. In general, black teas are best brewed for 4 to 5 minutes; green teas should brew for no more than 3 minutes.
Step 8:When the tea is ready to pour, remove the tea leaves. Over-brewed tea will become bitter, and unpleasant.
Step 9:Honey, sugar, agava, or any other sweetener can be added.

  FOP:Flowery Orange Pekoe,含有较多芽叶的红茶。
  TGFOP:Tippy Golden Flowery Orange Pekoe,含有较多金黄芽叶的红茶。滋味香气也更清芬悠扬。
  FTGFOP:Fine Tippy Golden Flowery Orange Pekoe,经过精细地揉捻精制而成的高品质茶叶。

Ceylon tea is a type of tea grown on the island of Sri Lanka. Sri Lanka was formerly known as Ceylon. Sri Lanka is the third-largest tea producer in the world, accounting for about 11 percent of the world's tea production.
History:
Until the 1860s, coffee was the main crop of what was then known as Ceylon, and no one was much interested in growing tea. Then, in 1869, a coffee-rust fungus devastated the island's coffee plantations and estate owners began to look for an alternative crop. They decided to follow the lead of a young Scot named James Taylor, who had started the first commercial planting of tea on the island in 1867.
Time frame
From a mere 400 hectares planted in tea in 1875, the island's plantations grew to 120,000 hectares of tea by 1900. Today, Sri Lanka dedicates nearly 220,000 hectares of land to tea production.
Geography
Ceylon tea is divided into three groups based on elevation. High-grown tea (above 1200 meters), mid-grown tea (200 to 1200 meters), and low-grown tea (sea level to 1200 meters). Each geographic region produces a unique and highly valued tea.
Types
Most Ceylon tea is produced using the orthodox process of production. When this is done, black tea is the result. Sri Lanka also produces a small quantity of green tea, instant tea and organic teas.

To prepare Ceylon tea to drink, you need 1 tsp. of Ceylon tea for every 8-oz. cup of tea you would like to brew. Bring cool water to a boil in a clean teakettle, using the highest quality and purest water available. Avoid using tap water, if possible. Once the water has just boiled, pour it over your Ceylon tealeaves or tea bag in a warmed teapot or cup. Allow the tea to steep for 3 to 5 minutes.
